Food Handling Certificate

Description

This course incorporates the nationally recognised unit SITXFSA006 Participate in safe food handling practices.

This course provides the skills and knowledge required to handle food safely during the storage, preparation, display, service and disposal of food in hospitality facilities such as restaurants, cafes, hotels, event venues or caterers. It requires the ability to follow predetermined procedures as outlined in a food safety program.

Participants will learn how to:

  • Follow a food safety program
  • Store food safely
  • Prepare food safely
  • Provide safe single-use items
  • Maintain a clean environment
  • Dispose of food safely

Who is this course for?

Food handlers must comply with the requirements of the Australia New Zealand Food Standards Code. This course is for food handlers who directly handle food during their daily work and are responsible for following a food safety program. This includes cooks, chefs, caterers, kitchen hands and food and beverage attendants.

Prerequisites

There are no prerequisites to undertake this course.

Assessment

A range of assessment methods is used to assess the practical skills and knowledge required for food safety, including written questions, role plays and scenarios, quizzes and oral questioning.

For the skills component, participants must demonstrate safe food handling practices in line with organisational hygiene procedures on at least three occasions in an operational food preparation area, either in an industry workplace or a simulated industry environment. The practical class and/or a Supervisor Report completed by your nominated workplace supervisor are used to assess this requirement.

Certification

Upon successful completion of the course, participants receive a nationally recognised Statement of Attainment.

System requirements

To undertake the online component of this course you must have access to:

  • A tablet or smartphone (Apple or Android), or a computer with webcam and microphone (laptop or desktop)
  • A reliable internet connection
  • A scanner or smartphone camera to upload documents for assessment
  • A valid email account

Language, Literacy, Numeracy Digital (LLN&D)

To successfully participate in the training and assessment of this course you need a minimum level of language, literacy and numeracy skills. You need to be able to:

  • Read, write and interpret documents or diagrams such as in-house hygiene and food safety procedures, warning signs and labels, and complete the assessment questionnaires
  • Calibrate and use a temperature probe and calculate timings
  • Communicate verbally, for example to report food safety hazards

If you have a disability, special needs, or reading or writing difficulties that may affect your ability to complete this course, please let us know before you book so we can arrange appropriate support. All students complete a short LLN self-assessment before training starts.

Unique Student Identifier (USI)

Participants must hold a USI and provide it when booking. Without a USI we cannot issue a certificate, Statement of Attainment or transcript. Create your USI for free at usi.gov.au.

Proof of identification

We are required by law to verify your identity. Please provide a copy of your government-issued photo ID when you enrol, for example a driver licence, proof-of-age card or passport. Certificates cannot be issued without valid photo ID.

Duration & Structure

The course combines a face-to-face practical class with self-paced online learning.

  • Face-to-face practical class: 9:00am to 1:00pm on your chosen date.
  • Online learning and assessment: self-paced in our learning portal, completed after your class. Portal access is set up as soon as your enrolment is confirmed.

You attend your face-to-face practical class first, then complete the online learning and assessment. Accredited short courses must be completed within three months of enrolment.

Delivery

This course is delivered in a blended mode: a face-to-face practical session followed by self-paced online learning. The online content is broken down into easy, manageable modules designed to support your learning. Your practical skills are assessed during the face-to-face class in a simulated food preparation environment.
