This course incorporates the nationally recognised unit SITXFSA005 Use hygienic practices for food safety.
This course provides the skills and knowledge required to use personal hygiene practices to prevent contamination of food that might cause food-borne illnesses when preparing and/or serving food in hospitality facilities such as restaurants, cafes, hotels, event venues or caterers. It requires the ability to follow predetermined organisational procedures and to identify and control food hazards.
Participants will learn how to:
- Follow hygiene procedures
- Identify food hazards
- Report any personal health issues
- Prevent food contamination
- Prevent cross-contamination by washing hands
Who is this course for?
This course is for any food handlers who directly handle food or food contact surfaces such as cutlery, plates and bowls during their daily work in hospitality facilities. This includes cooks, chefs, caterers, kitchen stewards, kitchen hands, bar and food and beverage attendants, and sometimes room attendants and front office staff.
Prerequisites
There are no prerequisites to undertake this course.
Assessment
A range of assessment methods is used to assess the practical skills and knowledge required for food safety, including written questions, role plays and scenarios, quizzes and oral questioning.
For the skills component, participants must demonstrate safe food handling practices in line with organisational hygiene procedures on at least three occasions in an operational food preparation area, either in an industry workplace or a simulated industry environment. The practical class and/or a Supervisor Report completed by your nominated workplace supervisor are used to assess this requirement.
Certification
Upon successful completion of the course, participants receive a nationally recognised Statement of Attainment.

Language, Literacy, Numeracy Digital (LLN&D)
To successfully participate in the training and assessment of this course you need a minimum level of language, literacy and numeracy skills. You need to be able to:
- Read, write and interpret documents or diagrams such as in-house hygiene and food safety procedures, warning signs and labels, and complete the assessment questionnaires
- Calibrate and use a temperature probe and calculate timings
- Communicate verbally, for example to report food safety hazards

Unique Student Identifier (USI)
Participants must hold a USI and provide it when booking. Without a USI we cannot issue a certificate, Statement of Attainment or transcript. Create your USI for free at usi.gov.au.
Proof of identification
We are required by law to verify your identity. Please provide a copy of your government-issued photo ID when you enrol, for example a driver licence, proof-of-age card or passport. Certificates cannot be issued without valid photo ID.
Duration & Structure
The course combines a face-to-face practical class with self-paced online learning.
- Face-to-face practical class: 9:00am to 12:00pm on your chosen date.
- Online learning and assessment: self-paced in our learning portal, completed after your class. Portal access is set up as soon as your enrolment is confirmed.
You attend your face-to-face practical class first, then complete the online learning and assessment. Accredited short courses must be completed within three months of enrolment.
Delivery
This course is delivered in a blended mode: a face-to-face practical session followed by self-paced online learning. The online content is broken down into easy, manageable modules designed to support your learning. Your practical skills are assessed during the face-to-face class in a simulated food preparation environment.
